- 1 sweet potato, peeled and cut into strips
- 1 Tbsp coconut oil
- 1/4 tsp. kosher salt
- 1/2 tsp. pepper
- 1 Tbsp Coconut
Preheat oven to 400°.
Spread the sweet potato strips on the baking sheet in a single layer, coat with coconut oil and sprinkle with salt and spices, turning them to evenly coat all sides with oil and spices.
Bake for 30 minutes, turning after 15.
Substitute coconut with any spice that will compliment the meal: thyme, garam masala, curry, cajun spice, etc. experiment and have fun!
