Mexican Pizza

Mexican Pizza

  • 1 Whole-grain tortilla
  • 1 tsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 4 oz lean ground beef
  • 1 Tbsp Mild picante sauce
  • 1/2 c Finely shredded low-fat cheddar cheese
  • 1/4 c Tomato
  • 1/2 Tbsp Chopped fresh cilantro leaves
  • 3 slices of avocado
  1. Preheat over to 400 F.
  2. Place tortilla on nonstick baking sheet. Brush both sides with olive oil and bake 3-5 minutes until it beings to brown and get crispy.
  3. Preheat a small nonstick frying pan over medium-high head.  Brown meat, when it is no longer pink add spices.  When the meat is completely cooked remove pan from heat.
  4. Leave crisped tortilla on baking sheet and spread evenly with picante sauce.  Add the beef, cheese and tomato; Sprinkle cilantro over the top.
  5. Bake pizza 5-7 minutes or until cheese melts.  Transfer to serving plate, top with avocado and cut into wedges.
