Flour-free, Protein Blueberry Muffins

Hope you enjoy my very own recipe.It took me three attempts to get the amount of protein powder and almond meal perfect, so that you can enjoy a healthy muffin that will help you burn fat.  They’re always a hit with family and friends.

 

Makes 12 Muffins

Ingredients:

  • 2 1/2 c almond meal
  • 3/4 c vanilla protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 1 tsp lemon zest
  • 3 whole eggs
  • 1/2 c honey
  • 1 tsp vanilla
  • 1 1/2 c organic blueberries

Mix almond meal, protein, baking powder, baking soda, salt, cinnamon & lemon zest in a bowl.

Whisk together eggs, honey and vanilla. Add blueberries to egg mixture. Fold the wet ingredients into the dry ingredients, mixing well.

Fill the muffin cups and bake at 325F for 25 minutes
